Salt Cured Egg Yolks?
Salt-cured egg yolks are one of the most unique foods in the cooking world. They are egg yolks that have been drying in salt and sugar for a week that adds an excellent richness to any dish. To use them, simply grate a piece of each yolk onto any dish (I recommend pasta, pizza, etc.) for a burst of flavor.
Pro Tip: Let them dry for a few minutes in the oven on its lowest setting.
